Here is something that might interest you, WVJake. The person who bought a bunch of machinery from me has a 1965 356SC. He as owned it for three decades. His 356 has been rotisserie restored and looks really good. 12 volt became available in 1964 and remained an option until the last 356. His 1965 is 6 volt. I always thought the later 356 looked good in the early 911 FUCHS wheels. http://www.fuchsfelgeusa.com/wheels/fuchsfelge-17
I made a casual offer to buy the 356 and he gave a price. If I had a place to park this 356, I might be tempted. If I do buy a 356, it will be restored so I do not have to do a restoration.

My uncle’s ‘65 356 cab wears Fuchs on track days. Along with an open muffler and different jetting. Boy does it cackle! Likely always more cost effective to buy than build. I’d build a small HVAC’d shed in the backyard for either the Ford or the Porsche... then you don’t have to choose. Good luck in the pursuit if he takes you seriously.
